You’d always find a large tub of yogurt in my refrigerator. It has so many purposes – we love mixing it with granola or cereal for breakfast, spoon out for mid morning snack, use in curries or blend for smoothies and lassis during the summer. Yogurt is one of the most versatile and must-have in my pantry just like having eggs and salt. And one of my favorite drink to churn from yogurt is Lassi and all of us at home love drinking it from a tall glass. Mandatory chilled. I still remember the impressive lassis I’ve had back home; one was right after Jurassic Park movie outside the cinema hall in Nagpur and another one at a dhaba on the outskirts of Hyderabad city during one of our family dinners. Both the times it was perfectly creamy, sweet and left a funny line of froth above our lips. One of the signs to know how much we love gulping this sweet liquid in a sip.
When it comes to peaches, Paraguayan or doughtnut shaped peaches are our latest craze; they have a whitish flesh, better flavor and are more sweeter with almond notes in them. Well not only ours but cousins who came home for Eid gathering gave us a basketful of beautiful flat peaches with a squished shape than regular peaches. Luckily we are big fruit eaters in this house and there is always something healthy to snack, bake or cook with. And with so many peaches in abundance, I could only think of blending them with yogurt into a sweet and cool peach lassi as a boost against the temperature of the middle east.
Lassis don’t really need much – just plain yogurt, water and sugar to get the right consistency. Cream is optional, I love mine with it. Addition of fruits only make it superior – think of adding mangoes, bluberries, strawberries, apricots and bananas. I really didn’t find the need to add sugar because these peaches were super sweet but you can adjust the sweetnees to your preference.
- Plain yogurt - 1 1/2 cup
- Peaches - 1 cup diced
- Fresh Cream - 1/3 cup optional
- Water - 1/2 cup
Place all the ingredients in a blender and blend until smooth. Serve chilled.
